why??

long ago i made these raspberry jam sandwich cookies and they couldn't have turned out better. tart jam pressed in between 2 buttery cookies and finished off with a dusting of powdered sugar. not only did they taste good, but they looked lovely, with a deep red heart showing through the pale cookie frame.

then for some unexplainable reason, i could never produce the same outcome again. what am i doing wrong?!?! was this batch just a freak of nature, when the baking gods decided for that one instance, i would be in their favor? or did i somehow forget a step or ingredient that had previously brought these to life? whatever it may be, i am going to try one more time (once i have moved and settled in) and hope that they turn out like the ones in the picture rather than sad flat non-uniformly sized poo.
